clutch can engage, gears can change, but when in any gear or neutral when clutch is disengaged, a grindy sound comes from the transmission- any thoughts?

i would say it is the thrust bearing.

Throw out bearing is noisy. Did you replace it with the clutch assembly?
Did you fill the trans with fluid?? Just asking and did you use an alignment tool when you installed the clutch and press. plates
